Easy Baked Ziti with Beef and Three Cheeses (Family Dinner)

This baked ziti is the kind of family dinner that makes a full 9x13 pan, feeds a crowd, and gives you leftovers without requiring restaurant-level skills. Ziti pasta, beefy marinara, ricotta, mozzarella, and Parmesan bake together under a golden, bubbly cheese layer.

  • 1 pound lean ground beef

  • 1/2 teaspoon black pepper
  • 1 jar marinara sauce, 24 ounces
  • 1 can crushed tomatoes, 15 ounces
  • 15 ounces whole-milk ricotta cheese
  • 3 cups shredded mozzarella cheese, divided
  • 3/4 cup grated Parmesan cheese, divided
  • 1 large egg
  • 2 tablespoons chopped fresh parsley, plus more for the top

Instructions

  1. Heat the oven. Preheat the oven to 375°F. Lightly grease a 9x13-inch baking dish.
  2. Cook the pasta. Boil the ziti in salted water until it is about 2 minutes shy of fully tender. Drain it. Do not overcook it now because it finishes in the oven.
  3. Brown the beef. While the pasta cooks, heat olive oil in a large skillet over medium-high heat. Add the beef and onion. Cook until the beef is browned and the onion is soft, about 6 to 8 minutes. Drain excess grease if needed.
  4. Make the sauce. Add the garlic, Italian seasoning, salt, and pepper. Cook 30 seconds. Stir in the marinara and crushed tomatoes, then simmer for about 5 minutes.
  5. Mix the cheese filling. In a bowl, stir together the ricotta, egg, 1 cup mozzarella, 1/2 cup Parmesan, and parsley.
  6. Combine. Toss the drained ziti with about two-thirds of the meat sauce.
  7. Layer the pan. Spread a thin layer of sauce in the baking dish. Add half the pasta, spoon the ricotta mixture over it in dollops, then add the rest of the pasta. Pour the remaining sauce over the top.
  8. Cheese it. Cover the entire top with the remaining 2 cups mozzarella and 1/4 cup Parmesan.
  9. Bake. Bake uncovered for 25 to 30 minutes, until the sauce is bubbling and the cheese is melted with golden-brown spots.
  10. Rest. Let the pan sit for 10 minutes before serving. Sprinkle with extra parsley.

  • Undercook the pasta slightly before baking. Mushy pasta is the one thing this casserole cannot hide.
  • Do not worry about making perfect ricotta layers. Spoonfuls scattered around the pan work just fine.
  • If your family likes extra sauce, keep a second jar of marinara warm for the table.
  • That 10-minute rest at the end matters. Cut it immediately and the first serving will try to escape across the plate.
